Revolving Door is not a pop-up, a term now constantly bandied about in the restaurant period. A pop-up is an ephemeral operation in a temporary location. Revolving Door is a permanent bricks-and-mortar environment that has its own individuality. But the foundation of that identity is to feature the culinary creations of a succession of chefs. But the open kitchen at Revolving Door is identical different. It's not an exhibition kitchen set behind a glass wall where the line cooks are putting the final flourishes on edibles as they move around with balletic grace. It's the only kitchen, so diners experience dishes being clanked and washed and potatoes being fried, not just sprigs of pea tendrils being draped enveloping the edges of a plate. It's also the main bar area, so the clink of ice cubes and whirring of blenders adds to the aural mix. It's in this hub of labour, illuminated by an assortment of hanging red glass fixtures, where resident chef Josh Berman and beverage administrator Jason Kindness oversee their staffs and assist the visiting chef. Berman, a Johnson & Wales graduate, was sous chef for Bouchard for four years and then worked at famed Del Posto in New York. In counting up to overseeing the staff, he also guides the visitors in his kitchen to purveyors. Berman prepares two standing menu items so that diners not interested in experimenting with the visiting chef's eats know they can have steak frites or shrimp scampi. Kindness pays homage to Newport's history with arguably the largest rum record in the state, as well as some innovative cocktails. He then invents cocktails in tandem with the visiting chef, such as the current Pear Way to Bliss based on gin but incorporating arugula, pear puree, Aperol and citrus.
